Sirloin Pork Chops baked in Sauerkraut & Pears
Don’t bother washing yesterday’s pot (kidding) for tonight’s dish is the same theme: meat in a Dutch oven!
Fry 4 slices nitrate-free bacon, then cool and dice. Brown 2 large sirloin (humane) pork chops in the bacon drippings, 5 minutes each side.
Meanwhile, combine the following:
Salt and freshly ground pepper
2 T Dijon mustard
3 C sauerkraut, drained
2 diced pears
1 t caraway seeds
Lay browned chop on bed of mixture, then covering chops with mixture and bacon bits. Bake covered dutch oven all the above for one hour in a 350F oven, uncovering for the last 30 minutes.
If you use humane pork, you will notice the steam does not smell like a feedlot. Midwest folks know about feedlots. Commercially raised pork smells like a feed lot. Check it yourself!
