Pumpkin Pecan Smoothie (Low Glycemic)
Why celebrate Halloween with Jack-o-Lanterns, when you can bake pumpkins, freeze, and make lo-gly smoothies?  That’s what I did in 2011 and today I made a smoothie:
1/2 C Unsweetened Almond Milk
Frozen Pumpkin Chunks to top of milk
8 Pecans
1 T Walnut Oil
30 g Whey Protein Powder
1 t Vanilla Extract
1/2 t Cinnamon
1/4 t Nutmeg
Pinch of Allspice
Blend until smoothie!  Serve.
